Red Lentil Dahl- (serves 5)
Ingredients:

1 cup red lentils
3 cups hot water
1 small red onion
1 bunch chard/ kale or spinach
1 tablespoon ghee
1 teaspoon  turmeric
½ tablespoon Himalayan pink salt
¾ teaspoon cumin seeds
¾ teaspoon mustard seeds
½ teaspoon black pepper

Directions:
  1. Soak lentils for 20 minutes in warm water.
  2. Dice the red onion, wash and chop the greens and set aside.
  3. In a large pot, melt the ghee over medium heat.
  4. Add cumin seeds, mustard seeds and wait for the sound of the pop or until they become fragrant.
  5. Add diced onion and let it caramelize for about 10 minutes over medium low heat.
  6. Pour the soaked lentils over the onions.
  7. Add 3 cups of warm water
  8. Add the turmeric and Pink Salt and black pepper.
  9. Simmer for 20 minutes stirring occasionally.
  10. Serve over rice or quinoa.
