Coconut Spiced Sweet Potato Fries

Sweet potatoes are great for pacifying Vata and Pitta Dosha! They can be a bit heavy, so if you are kapha dominant you may want to have them less frequently. I have added some warming spices to my recipe to make them lighter and more digestable. Sweet potato fries make a wonderful side dish for breakfast lunch or dinner.  The best time of year to eat Sweet Potato is in the fall and winter. 


Ingredients:
(Serves 4)
2 large Sweet Potatoes
Coconut Oil
1 teaspoon Turmeric
1 teaspoon Garlic Powder
1 teaspoon Paprika
1 teaspoon Himalayan Rock Salt 

Directions:
Preheat oven to 400 degrees.
1. Chop potato into long strips, then chop in half to make a french fry shape. 
2. Melt coconut oil in a small pot. 
3. Brush a thin layer of coconut oil onto the bottom of a large baking pan. 
4. Lay potatoes flat on top of the oil. 
5. Brush more oil over the tops of the sweet potatoes. 
6. Sprinkle with spices and salt.
7. Bake for approximately 20-25 minutes or until golden brown. 
8. Word to the wise. They tend to get crispy once you take them out of the oven, so don't be sad if yours don't seem to be crispy right away. ;)
