
Cardamom Basmati Rice (Serves 6)

- 1 ½ cups Basmati rice
- 1 tablespoon cardamom powder
- 1 teaspoon cinnamon
- 1 teaspoon Himalayan pink salt
- 1 ½ cups unsweetened coconut milk
- 1 ¾ cup cold water
Directions:
1. Rinse the rice in a strainer under cold water until water runs clear. Drain well and transfer to a large saucepan with 1 1/2 cups cold water, cardamom, cinnamon, salt and coconut milk.
2. Place the saucepan over medium heat and bring to a boil. Cook until the liquid is absorbed and the surface is covered with steamy holes, about 15-20 minutes. You can add more water as it cooks if it looks like it needs it.
